Michelin-starred chef Yannick Alleno has launched three restaurants on The Palm Jumeirah, Dubai at the new One&Only beach resort.
Celebrated for his role as head chef at Le Meurice in Paris, Alleno collaborated with One&Only to offer a unique array of dining experiences at the outlets called Zest, Stay by Yanick Alleno and 101.
Alleno said: “It was a natural decision to partner with One&Only The Palm as it echoes the same quality and exigency I have in culinary and food creation”.
First up was Zest, the main restaurant with 120-covers and theatrical show kitchens offering a combination ofg Middle East. Asian and Western cuisines. The restaurant features a conservatory-style dining environment and al fresco options overlooking the pool.
The specialty restaurant is Stay by Yannick Alleno, which promises “a fine dining experience without traditional formality”. It is deisgned using a monochromatic palette of black, bronze and silver with vaunted ceilings and Bohemian black crystal chandeliers.
The third outlet — and the final one to open — is 101, which is set above the water and features seasiode tables and daybed as well as a champagne bar. Cuisine is focused on tapas, salads and seafood, while a DJ provides entertainment.
Olivier P. Louis, Managing Director, One&Only Resorts, Dubai, said there was a need for these outlets in Dubai.

One&Only The Palm is the latest hotel to open on The Palm Jumeirah, with the first guests accepted in November.
