Six Senses Zighy Bay appoints chef de cuisine

Six Senses Zighy Bay has welcomed its new chef de cuisine, James Knight Pacheco, to launch a new a la carte menu at its Sense on the Edge restaurant.

Pacheco has more than 10 years’ experience in kitchens, including being a tutor at the Ashburton Cookery School in Devon, UK, and chef at the Michelin-starred restaurants Gordon Ramsey at Claridges and The Square in London, as well as Le Manoir aux Quat’Saissons in Oxfordshire. The chef was also runner-up on the second series of BBC show The Restaurant.

“This new opportunity is challenging and exciting, and I have thoroughly enjoyed creating this new menu and concept with executive chef Steven Wilson and the culinary team,” Pacheco said on joining the team in Oman.

The new menu at the restaurant, which he helped devise, includes six courses, with dishes including Blackmore wagyu beef and Arabic spiced and roasted scallops with almond and pine nut crumble.

Pacheco said: “I wanted to create International recipes while integrating rich Arabic spices. The concept is to entice the guests with comfortable dishes and complex flavours that continually deliver a new dining experience, particularly to returning guests.”
