Madinat Jumeirah in Dubai has refreshed three outlets as part of a project called Gold Standard, designed to “realign and reinforce” some of its most successful restaurants.
The project, which so far has included MJ’s steakhouse, Bahri Bar and Chinese restaurant Zheng He’s, involved stripping the concepts down to understand “its identity, service standards, and what the food is we want to serve”, resort executive chef Sebastian Nohse told HotelierMiddleEast.com
“And then we got in a very talented service trainer called Bob Brown, and we really started as if it was a new opening. We went through one-month extensive training with what is really expected with all the service. That is something that Jumeirah drives very strongly, that instead of investing in new concepts, we go into our existing ones and we want to make them great,” asserted Nohse.
“So we go back into every aspect of what is involved in running this restaurant, training, and our expectations. We align our menus and presentation into what we feel is appropriate and we reopen that outlet. And that has been a tremendous success” he said.
