Fairmont Dubai to offer dining in the dark

Next month Fairmont Dubai will be offering diners the chance to test their taste buds with dinner served in complete darkness at the new Noire at Spectrum on One.

Having teamed up Sightsavers, the international charity who help blind people across the developing world, Noire at Spectrum on One will see the restaurant completely blacked out for a one and a half hour three course set menu, with the restaurant’s serving staff donning night vision goggles in order to help guide guests to their seats.

Fairmont Dubai executive chef Lorraine Sinclair said: “So much of our opinions of taste are influenced by how a dish is presented, even before we’ve taken a bite. Whereas plating [during normal circumstances] is fundamentally important from the guest perspective, everything is thrown out of balance at Noire with textures, smells, flavour combinations and even sounds taking precedence.”

Starting on September 6, Noire at Spectrum on One will be available for dinner every Friday, Saturday, Sunday and Monday evening, as well as a reception [in the light] to discuss the featured menu with the chef and restaurant manager. AED 27 ( US $7) of the proceeds from each dinner will be donated to Sightsavers, with each evening limited to 30 persons.
