Meat & Livestock Australia (MLA) returns to the Caterer Middle East Chefs & Ingredients forum as workshop sponsor on October 8, 2013, at the InterContinental Dubai Festival City.
The company's head chef Tarek Ibrahim will host the Red Meat Masterclass to share the skills required to reduce waste and get the best cuts of meat from both beef and lamb.
MLA regional manager MENA Jamie Ferguson said: "We believe all stakeholders should understand the origin or provenance of their product offering particularly with red meat which so often is the centre of the plate.
"We at MLA also believe it is vital for us to support our leading chefs and establishments through knowledge sharing to maintain the high rate of growth in excellence that the UAE is becoming famous for globally."
Now in its second edition, the Caterer Middle East Chefs & Ingredients event is an industry-specifc forum expected to be attended by 150 executive and head chefs, F&B directors and GMs from the UAE.
Ferguson said he expected this trend to be discussed at the event: "The need be innovative and resourceful to achieve amazing results from products that when matched with particular cooking methods open new doors in menu options and profitability."
He added: "Australian grass fed organic beef and lamb has been the shining light in the product segment in the UAE in 2013; we hope to open some minds on how organic can be possible and where to source the best organic red meat from – also don’t be surprised to see some Australian goat being offered in the market very shortly.
"After a record year in 2013 so far we are happy to say we are not relaxing and we will continue to work with chefs in the region identify new products and angles to keep the customers excited about clean, safe delicious Australian halal beef and lamb."
