BEECH OVENS
Keeping up with the latest trends in open and show kitchen designs

Beech Ovens was initially part of the Beech Group, a family construction and refractory engineering company established in Brisbane, Australia in 1958. Today, Beech Ovens is part of global kitchen equipment and food service company The Middleby Corporation.

As part that group, Beech Ovens aims to provide a high level of service to all its clients using a global sales network to complement the team in its Brisbane Head Office.

The Beech Ovens product range has expanded from its original stone hearth oven first manufactured in 1989, to now include rotisseries, tandoors, duck ovens, char grills, specialty grills and bread ovens.

All of these designs, explains Beech Ovens director of sales and engineering Stephen Trood, are perfect for keeping up with the latest trends in commercial kitchen design.

“Theatre kitchens, open kitchens and lots of visuals and flame will continue to be popular in international food service because bling is king,” says Trood.

“Flexibility is our key ingredient and our company motto ‘If you can conceptualise it, we can build it’ enables our team of design engineers to take your dream idea and make it into a spectacular customised oven for your kitchen,” he adds.

Beech Ovens’ latest products include electric stone hearth ovens, 16th century rotisseries, 360-degree open churrascos and wood burning shawarmas.

“Not just a pizza oven, the Beech stone hearth oven is incredibly versatile and can be used to roast, grill, bake, fry, sauté, steam and much more. That the oven is able to do such a broad spectrum of cooking duties has been achieved by placing items requiring a cooler temperature nearer the mouth of the oven (where it is cooler) and vice versa.

Cooking with a wood fire, although incredibly hot, is also very ‘forgiving’. Breads could be cooked at off-peak times and reheated, or par-baked elsewhere and finished off in the oven,” says Trood.

CHARVET
The bespoke kitchen equipment producer famed for modular suites

Charvet Premier Ranges is a UK-based producer of bespoke kitchen equipment, created by its team of craftsmen in its factories in the French Alps. Charvet’s range of products includes one-piece tops for modular suites, wall or island, or semi one-piece tops for island suites.
All of Charvet’s modular suites can be bolted together to form central island suites, while half module units can be used within the design to enable more control over the layout.

It’s this customisability that allows Charvet to offer the right package of equipment to fit any particular hotel menu, all backed by expert advice from a back up and support team with experience of commercial kitchen design, both in Europe and the Gulf.

Charvet Premier Ranges managing director Wayne Cuomo says: “It is the survival of the fittest in the market at the moment and manufacturers who are continually striving to produce equipment and features that the customer wants are increasing their market share ... modular ranges are quite often seen as a genuine alternative to bespoke if it can be tailored to suit the customer. Those that don’t have this flexibility are falling behind those that do!”

Charvet recently launched the Charvet Pro700 series which aims to set a benchmark for compact but durable cooking equipment.

Only 700mm deep and 900mm high, Pro700 has been developed especially for locations where space is restricted, such as the busy service and satellite kitchens or poolside bars and grills found in hotels and restaurants across the Gulf.

The Pro700 features a choice of 60 gas, electric and induction modules including burners, solid top, smooth chrome coated or steel plancha.

For more than 30 years Rational has aimed to be a specialist in hot food preparation for the world’s professional kitchens, while offering the maximum benefits to customers. By relying on regular innovation, Rational has formed a leading position in terms of technology and market share, while rapid growth has increased its share of the world market to 54%, with 100 million meals now prepared every day in Rational units in all parts of the world.

The company, based in the Bavarian town of Landsberg in Germany, is also in the process of expanding its premises, with construction work on a new 7500 square metre international service parts warehouse beginning back in October 2013, and which is due to be completed in autumn 2014.

Rational International Middle East chief representative Simon Parke-Davis says: “Space plays a major role in every kitchen. The combi-steamer technology offers the perfect solution with maximum application flexibility but minimum space requirement. It is getting more and more important that kitchen equipment is easy to use.”

“New technologies allow kitchens to achieve the best cooking results, even with untrained staff. For instance Rational has created a software solution that makes operator errors almost impossible,” he adds.

Rational’s new software ‘MyDisplay’, is an inbuilt software function which removes all unnecessary displays from a Rational appliance’s user interface, so that each individual user only sees the cooking information necessary for their current task.

The Rational SelfCookingCenter Whitefficiency also makes it possible to ensure hygiene safety with documentation of HACCP and automatic cleaning of the unit. It also replaces almost all the appliances traditionally found in a professional kitchen, with the ability to grill, steam, gratinate, bake, rise, roast, braise, simmer, stew, poach or blanche.
