Hotelier speaks to Chef Akshay Nayyar, executive chef at Melia Dubai about how winning Chef de Cuisine of the Year at last year's Hotelier Awards has impacted his career.

Are you still in the same role you held last year?
I am still with Melia Dubai, however I’ve been promoted to executive chef.

Has winning a Hotelier Award impacted your career in any way and if so how?
Yes, definitely! I have gained more confidence in myself and it has also motivated me to work harder in developing my career. I have been promoted from chef de cuisine to executive sous chef and now finally executive chef since November 2013.

Are you hoping to be nominated this year for an award?
Absolutely! For executive chef of the year this time.

What are you doing to achieve your goals and dreams?
I am learning every day as our industry is very dynamic and competitive. You need to be always one step ahead of the game, developing new concepts and experimenting with them.|

What’s your dream position?
I’d like to be a culinary director for a major F&B brand.

Who is the one person that inspires you most?
Indian celebrity chef Sanjeev Kapoor

What is your life ambition outside of work?
To have my own culinary research and development institute where aspiring chefs can experiment and study professional gastronomy.
