Anantara The Palm gets new executive chef

Anantara Dubai The Palm Resort & Spa has appointed Maurice Fitzgerald as the new executive chef.

Fitzgerald will lead the 96-strong kitchen team across six restaurants and bars at the resort.

The Irish chef brings more than 24 years of culinary experience to his new role, having previously worked with high-end hospitality brands and cruise liners, most recently Jumeirah Group.

In his new role, Fitzgerald will work with his team to develop and evolve the menus and promotions for all the restaurants and bars under his remit, including Mekong, Bushman’s Restaurant & Bar, The Beach House, Crescendo, The Lotus Lounge, and Mai Bar.

Fitzgerald will also oversee the resort’s first anniversary celebrations, including the associate appreciation brunch and the Friday Fork & Cork Brunch.

Furthermore, he will be involved in the planning of the resort’s CSR programme and will play a key role in implementing activities throughout the year.
