Paramount Hotels and Resorts is working on developing its F&B concepts with US-based Blau Associates.

Speaking to Hotelier Middle East, Paramount’s chief executive officer Thomas Van Vliet said: “We are focused on a very unique dining experience – teaming up with celebrity chefs and creating some original cuisine; it will have a very Californian touch.”

“The California touch is a real way to differentiate ourselves from everybody else because our roots are from California, so that’s a very easy link,” he added.

Explaining the group’s F&B development process, Van Vliet said: “When we get involved in the development of a hotel or resort, another consulting company is used, and this consulting company studies the market and comes up with the distribution of space for F&B, and then we use what we have developed with Blau and Associates to create the food and beverage package for the hotel. It depends on where the hotel is located the market, the demand, the size of the property.”

The group currently has four properties under development in Dubai, as well as other hotels at various stages of development in Riyadh, Jeddah, Los Angeles, Kuala Lumpur, Macau, Hainan Island, and London.
