What attracted you to the role at IBL?
Cocktails and the bar scene have always excited me, and I have had a fascination with coffee and the new wave coffee scene that is gripping Dubai. IBL fitted into two passions, which doesn’t always happen, and it’s enabled me to develop and leave my mark in the beverage scene through my cocktails as well as the coffee world.
What excites you about cocktail development?
Continuously trying to find a different source of inspiration from everything around me. I work closely with our kitchen team to try new ideas and flavours, utilising chefs’ great palates, and staying connected to the food in the restaurant.
What beverage and cocktail trends do you see in Dubai?
Preferences have been leaning more towards crafted, house-made ingredients, using fresh and local products. I have been working hard to bring this into IBL and we are now creating all our own syrups/syrup infusions along with all our own dehydrated garnishes.
