Baker & Spice’s organic brasserie in Souk Al Bahar could become a licensed venue in the future.

In a recent interview with Caterer Middle East, Baker & Spice country manger Andre Gershel revealed that there are tentative talks taking place to offer “a more extended beverage programme” but emphasised that the brand is not looking to make any changes that affected the core of the concept.

“We’re working on it at the moment but we have to be very cautious because I think there are many places in Dubai that quickly become beverage-centric and we don’t want to do that."

“If we go down the correct path and do it appropriately, in a perfect world I’d love to see Baker & Spice offer an easy, casual dining experience with the complement of a great beverage; something very limited and simple, where you can have a glass [of wine] and a plate, and go home feeling like you had a wonderful, satisfying evening,” he shared.

Gershel added: “It’s very important that we pay close attention to cultural sensibilities — I don’t want to alienate the immense customer base we have, which is very family oriented, and we have great Emirati supporters. We need to navigate those waters very carefully and make sure that we come up with something that is comfortable.”
