Part of Autograph Collection Hotels, Marriott International’s portfolio of independent hotels, La Ville Hotel & Suites City Walk is the first hotel to open in Dubai’s new urban neighbourhood.
According to a recent release: “Chival offers an extensive range of menus available all throughout the day that reflect global cuisine, focusing on healthy and thoughtfully sourced products.”
At the helm of the kitchen is chef David Schaumburger, who began his career at Landschloss Fasanerie and has spent a tenure working at two Michelin star and 18 points Gault Millau restaurant Villa Rothschild alongside executive chef Christoph Rainer.
He said: “Chival is an extraordinary outlet with multifaceted international cuisine and ever changing menus. I am very passionate about experimenting with a range of healthy ingredients and incorporating flavours from around the world.”
The menu features South American acai and goji bowls for breakfast, Caribbean fish sandwiches for lunch and the Spanish-inspired pulpo Gallego consisting of smoked octopus and roasted potatoes for dinner.
In keeping with their healthy and sustainable concept, the beverage selection includes an extensive range of biodynamic wines, organic cold pressed juices and matcha teas known for their antioxidant properties.
