Dubai Municipality recently announced a new slate of health and safety rules for food trucks.

According to Gulf News, the rules include specific material, ventilation, sink, storage and lighting stipulations for food truck kitchens.

“The kitchen area in the vehicle must be suitable for the permitted activities,” Dubai Municipality permits and applied nutrition section head Noura Al Shamsi said.

“The floors, walls and ceilings should be made of smooth materials; they should be easy to clean, non-absorbent of water, fire-resistant, light-coloured, non-toxic and without cracks.”

The preparation of raw materials such as thawed meat, poultry and fish is not permitted in the trucks; the cleaning and washing of vegetables in the trucks is likewise not allowed.

Clean vegetables need to be sterilised and stored in clean, appropriate containers outside the vehicle in a licensed and secure place.

Food truck activities should be limited to heating operations, simple barbecues and fry-ups for ready-made meals, such as burgers, sausages and French fries, Al Shamsi said.
