Accents Restaurant, InterContinental Dubai Marina  

Psalidakis has more than18 years of international experience and was part of the InterContinental Dubai Marina pre-opening team in 2014.

 

Nguyen Thanh
Thiptara, Palace Downtown

Thanh is very hands on, communicating daily with the service team on which dishes to upsell for the day and attending briefings and conducting questionnaires about the menu. 

 

Yukitaka Kitade
Umi Restaurant, Waldorf Astoria Ras Al Khaimah    

Kitade is a master in his trade which he showcases on a daily basis through a tight food cost control by food cost analysis and weekly inventory.
