La Chaine des Rotisseurs hosted the third edition of its Young Chef Competition in the UAE at ICCA Dubai, with Radisson Blu Dubai Deira Creek's Malimage Ishra Chamika Perera winning the top prize.

Perera, who has also been shortlisted in this year's Caterer Awards, will represent the UAE in the international competition in Frankfurt, Germany in September.

In second place was Aprian Herlambang from Atlantis The Palm, and the third rank was nabbed by Ali Salleh from the W Dubai - Al Habtoor City.

The top three were among 13 young chefs competing for the prize, and had to work with ingredients from a mystery black box. It contained chicken quarters, chicken liver, king prawns, Asian sea bass , baby leek, tarragon , yams, risoni pasta, golden beetroot, raspberries, mangoes, star anise and white chocolate.

After 30 minutes of writing menus, the young chefs started cooking. Kitchen judges were keeping an eye on cooking skills, as well as product use, wastage, hygiene and work flow.Finally, the tasting judges marked the participants on presentation, flavour, and taste.

The competition was organised by Radisson Blu Hotel Dubai Deira Creek director of kitchens and Emirates Chefs' Guild president Uwe Micheel and Daniel Hiltbrunner Conseiller Culinaire Honoraire from ICCA.
