Local Food Hero: Dibba Bay oysters, Fujairah

For the first instalment of Caterer Middle East's Local Food Hero series, we head to Fujairah to speak to Ramie Murray, managing director of East Coast Shellfish, who is producing the UAE's first locally-grown oysters.

We also speak to Georgiy Danilov, chef de cuisine at Fairmont Fujairah Beach Resort, who explains why he likes working with the oysters and how they fit in to the resort's local, sustainable ethos.
