For the chicken
Ingredients:
1 whole chicken
1tbsp five spice
5g fresh ginger
5g spring onion
1 tbsp cooking salt

Method:
Rub the seasonings onto the chicken evenly, cover and leave for 2-3 hours minimum (overnight is best).
Steam the whole chicken for 1 hour, then leave to cool.
De-bone chicken and shred the meat.
For the sauce
Ingredients:
2 tbsps light soya sauce
1 tbsp sesame paste
2 tbsps sugar
2 tbsps black vinegar
1 tbsp chili oil
5g fresh ginger
5g garlic
Method:
Blend all ingredients together.
Dress the shredded chicken with the sauce.
Garnish with chopped spring onion.
Serve with steamed or baked bread.
