Greek F&B concept confirmed for The Royal Atlantis Resort & Residences

After a series of high-profile chefs revealing they will be opening outposts at Dubai's Royal Atlantis Resort & Residences, the next F&B venue at the resort to be revealed is Costas Spiliadis' Mediterranean seafood concept Estiatorio Milos.

Set to open in Dubai in late 2019, the Greek concept originated in Montreal in 1979 and now has outposts in New York, Athens, Las Vegas, Miami and London.

According to a statement, the design includes "a structure which appears to ‘float’, and is fully transparent", and will provide guests with unobstructed views of The Royal Atlantis’ water fountains as well as the Dubai skyline. It will have 6m-high ceilings, Greek marble floors, and sliding floor-to-ceiling glass doors on both sides of the restaurant which will pull back to reveal a central platform that seats guests at the heart of the open show kitchen.

In addition to the 220 indoor seats, three private dining rooms are available, including a rooftop and a terrace.

Estiatorio Milos will offer diners family‐style sharing of dishes, with ingredients sourced from around the world. Featuring fresh catch daily, guests can select their favourites from the display before being prepared by the kitchen, either grilled or baked in sea salt to concentrate the natural flavours – a Milos signature. Complementing the seafood offering is a raw bar with items such as Greek wild oysters, whole-fish sashimi and tartar. Signature dishes will include the Milos Special, a tower of paper-thin, crispy fried zucchini and eggplant slices over house-made tzatziki and Kefalograviera cheese. Guests will also enjoy a selection of mostly Greek and Mediterranean grape, with more than 300 bottles available.
