Eco-cooking at Convotherm

Convotherm Elektrogeräte GmbH has developed a new energy efficiency ecoCooking mode for its combi steamers. EcoCooking saves up to 25% energy and is verified by the new DIN regulation 18873-1. The ecoCooking mode, featuring Convotherm’s integrated Advanced Closed Systems to keep almost all the heat inside the chamber, was awarded the Gulfood Award for the best environmental initiative during the Gulfood exhibition in February 2010. Since December 2009, all Convotherm combi steamers with the easy touch option have been equipped with ecoCooking.

Instata makes a splash

Instata, the water boiler manufacturer, has launched a range of Sous Vide Digital Water Baths.

Available in two sizes, the water baths have been designed specifically for sous vide cooking.

Following six months of trials in busy restaurants, the water baths are now in production in 25-litre and 38-litre sizes.

The baths are easy to drain for cleaning, and have a low water audible warning sign with boil-dry protection to safeguard the element.

The units come complete with a hinged safety glass lid and a two-year guarantee.

Instata managing director John Brassey said: “With more than 50 years of water heating experience, this is a natural first venture into prime cooking equipment and we have made sure that we have created exactly what chefs want.

“The new machines contain unique features that have evolved from working closely with chefs who use sous vide as an important part of their menus and we are confident that we have got the package right.”

Toast of the town

New from Rowlett Rutland is the six slot Regent bread toaster. Built in the UK, each toaster is individually tested and certified before leaving the factory.

The toaster features a stainless steel top coupled with a white body of epoxy polyester powder paint electronically bonded to the metal.

The toaster is designed for all manner of food service applications, including pubs, clubs, restaurants, hotels and leisure outlets and features a ‘toast ready ringer, neon indicator lamp and convenient pull-out crumb tray for easy cleaning. To maximise customer satisfaction, the Regent automatically switches off at the end of a cycle, but the toast remains warm in the machine until taken out.

Born Airfree

Airfree is a fresh produce preservation method, which is suitable for food and beverage chillers and food stores. Destroying airborne microbiological pollutants such as bacteria, mould and fungal spores, Airfree creates a more sterile environment which reduces wastage of fresh food and freshly prepared meals. Weber cuts the mustard

Weber has introduced a new set of knives made ‘with striking quality and craftsmanship’. The knives have been made from a piece of hammered out German steel, and then ground and polished in to their final shape. Weber says that the knives are very masculine in their design and expression. The Weber StyleTM knives range consists of a chef’s knife, a breadknife, a vegetable knife, a herb knife and a carving set.

Hobart saves water

Hobart will be unveiling its new system ‘Water Saving 3-Plus’ for hood-type dishwashers. This technology saves up to four litres of water per rack. With this water savings system, all water which enters the machine is used three times — for rinsing, for wash water regeneration, and outside of the machine for manual prewash.

After being filtered, the machine’s drain water is transferred to a tank. A pump then transports this filtered water to the manual pre-washing station before the water is discharged for drainage.

The warm drain water still contains detergent, thus making the manual prewash function far more efficient. New tap water is only needed for prewashing if the tank is empty.

Water Saving 3-Plus is compatible with all of Hobart’s profi and premax hoodtype models and can also be retrofitted.

Hobart’s new Water Saving 3-Plus combines ecology and economy, which makes a major contribution to sustainable use of environmental resources. The new development brings Hobart closer to what it says is its ultimate goal: ‘washing without water’.
