Carpigiani Gelato University has confirmed it will be running a second course in six months’ time due to the popularity of the first course that was held at the beginning of October in Dubai.

Organisers also hinted that the courses will continue on after that and increase in frequency.

The first three-day course, which took place in Jebel Ali Free Zone, saw students travel from as far as Kuwait, Palestine and Bahrain to learn the art of gelato-making. They ranged from people already working in the industry who wanted to perfect their techniques, to those looking for a career change.

Luciano Ferrari, head of the education and training at Italy’s Carpigiani Gelato University, and course leader, said that he wasn’t surprised the course was so popular.

“The gelato business is booming all over the world and the reason is obvious: it’s a profitable business. You don’t need a lot of cash to start making gelato - you can buy the ingredients to make 1kg for about US $2.50, and you can sell 1kg of gelato for about $20-34.

“There’s consistent growth, even in the markets that are saturated. In Italy, where there are already about 35,000 gelato shops, the market continues to grow.

“We were not hit by the recession at all – instead the industry grew as more and more people started looking for a new career. If a family saves on a restaurant bill, they still can treat themselves to a US $13 treat,” he explained.

The Carpigiani Gelato University was founded in 2003 in Italy as the education division of Carpigiani Group, a leading maker of ice cream machines. In 2010 it organized over 12,000 gelato-making courses across the world.
