BiCE Mare’s award-winning executive chef, Francesco Guarracino, has launched a programme of cooking masterclasses at the restaurant in Souk Al Bahar, Dubai, to teach foodies how to cook regional Italian cuisine.

The monthly classes will focus on different Italian specialties including homemade pasta such as ravioli, tortellini, lasagna and cappellacci as well as signatures sauces accompaniments and seafood. The programme, which can accommodate up to 25 people at five cooking stations, has been designed to be interactive and engaging, with Guarracino on-hand to provide tips and culinary tricks to get the best out of the ingredients, as well as discussing the history of the dishes.

“A lot of our guests at the restaurant ask how we create certain dishes and as my background includes teaching aspiring chefs at one of Italy’s top culinary institutions I thought that running a series of masterclasses would be something that people would enjoy and really learn from,” said Guarracino.

We start with the basics and I run through the history and the traditional methods for preparing the dish so that my students will really get the most of the sessions. The entire kitchen team at BiCE Mare is Italian, and come from all over the country, so our passion for spreading and passing on our knowledge about the cuisine that we love works perfectly for these classes. We want people to enjoy food from start to finish and really get an understanding of why Italians are so proud of their culinary history and culture.”

Guests will enjoy a lunch and drinks as well as having the chance to sample the dishes made during the class. Each dish will be sampled and a winner will be chosen during each session who will receive a range of special prizes.
