BiCE Mare has bought the largest White Alba Truffle to be served to its customers in Dubai weighting in at 503g.
The White Truffle will be served as part of risotto dish that is with Acquerello, a rice grown, aged for 7 years, whitened and packed in Italy on the Colombara farm by the Rondolino family. The risotto will be cooked live on each table in a large parmesan wheel with added golden flakes giving the customer a unique experience. The Risotto dish is valued at AED 500 (US$ 136) that includes 4 grams of White Truffle.
Other diners can request the truffle to be shaved on to their meals at a cost of AED150 ($41) per 1g.

The news comes less than a month after Zuma Dubai announced it had sourced the largest truffle to be imported into the UAE weighing in at 349g with a market value of AED 52,350 (US $14,251).
The Japanese restaurant had told Hotelier in an interview that it had been “the worst season for truffles in decades”.
“Prices are astronomically high for the huge demand and the rainless summer indicates that very few truffles will be found this season,” they said.
