Cavalli Club bartender Ferdie Idris was at this year’s Gulfood creating a range of fun-flavoured mocktails including red-pepper and mango, using Boiron purees.

Boiron has launched a number of new flavour purees this year including lemongrass, bergamot and red-plum, said to be particularly popular among European chefs as it “reminds them of their childhood,” explained Nael Berry, area sales manager, Boiron.

Idris said he favoured the purees because of their freshness: “They’re great for balancing the body of a mocktail or a cocktail because they are so natural".

“I’d recommend using a syrup too but just to tie in the flavours, the purees give a great base flavour,” Idris added.
