Reflets Par Pierre Gagnaire’s head chef, Olivier Biles walked away with the award for Head Chef of the Year title, sponsored by MLA, at the Caterer Middle East Awards 2013.
Touted as one of InterContinental Dubai Festival City's most valuable team members, Biles has been part of the restaurant since it opened five years ago. The fact that he has retained over 80% of his team since the pre-opening phase is testament to his skills as a leader.
ITP Business group editor hospitality, and Caterer Awards judge, Louise Oakley, said: “Olivier has committed to the outlet since day one and produces an excellent offering.”

“After operating for five years, it feels fantastic to finally win this award” an ecstatic Biles told Caterer after picking up his award from MLA regional manager Jamie Ferguson.
Asked what his trick was for high staff retention, Biles said: "We treat staff the way we'd like to be treated. We give them the knowledge, develop them, and they want to stay. It's not about money. It is all about passion. Without a doubt I can say the Reflets Par Pierre Gagnaire Dubai team out of all the teams I have worked with is the best."
Cosimo Danese, head chef at BiCE; David Miras, executive chef at Al Diwaan; and Sudqi Naddaf, executive chef at Kempinski Hotel Mall of the Emirates were among the notable chefs shortlisted for the award, while Table 9’s Nick Alvis was highly commended by judges.
