Caterer Middle East can reveal that Reflets Par Pierre Gagnaire head chef Olivier Biles will be leaving in June 2014 to the south of France to take over a new Pierre Gagnaire venue.
After a six year tenure that predates the opening of Reflets at InterContinental Dubai Festival City, Biles, who won the Caterer Middle East Award for Head Chef - Hotel Managed Outlet last year, will once again collaborate with Michelin-starred chef Pierre Gagnaire. He will assume the leadership of a new restaurant in the south of France.
Replacing him will be Francois Xavier Simon, who has been working with the restaurant for the last four years.
A spokesperson for IHG said: "Under Olivier’s impassioned leadership and exacting culinary execution, he has nurtured a successful partnership w ith Pierre Gagnaire and InterContinental Hotels Group, and positioned Reflets as the best fine dining restaurant in Dubai for six successive years."
As he leaves, Biles and Simon have prepared a special 'Farewell Menu', which will recreate a selection of some of the most popular dishes of the past six years. These selections will be served for dinner only on Tuesday, May 13, 2014.
