The award for Pastry Chef of the Year went to Paul Hayward, pastry chef, Madinat Jumeirah, at the Caterer Middle East Awards which took place at Ritz-Carlton DIFC on June 11.
The award celebrated those pastry chefs for their ability to construct beautiful and delicious pieces of art that appeal to everyone, young and old. Hayward was a clear favourite among the judges, going above and beyond to conceive new concepts across a huge operation.
On collecting his trophy, Hayward commented on why he believed he deserved the award: “It’s about being innovative, creative, thinking outside of the box. I do a lot more than a normal pastry chef would do, I’m dealing with every level in every department.
"Normally pastry chefs are very set in their ways and can’t think outside of the box. I try to think more about the customer than myself.”

Highly commended for the award was Christiane Trilk, Waldorf Astoria, Ras Al Khaimah who uses her skills to create items that incorporate the local heritage of a region.
Also shortlisted for the award were Praseeth Pavithran, Le Royal Meridien Abu Dhabi, Sanjit Gupta, Le Meridien Al Aqah Beach Resort and Yana Murashova, Emirates Flight Catering.
The Caterer Middle East Pastry Chef of the Year Award was sponsored by Chef Middle East.
