Alto Shaam is targeting food trucks and the upcoming F&B and restaurant segment in the UAE.

“Alto Shaam has been known in the market for producing holding units, but we have branched out to offering several other products. The latest of those is the combi ovens that can cook several types of cuisine at the same time,” said Gabriel Estrella Talenti, director, Middle East and Africa, Alto-Shaam.

"The main benefit of our combi therm series is that it has the smoking chamber built inside the cooking unit itself," Talenti said. He also explained that the combi units are able to cook, sear, heat and do every other function expected of a multi-function oven.

The smallest of the combi therm units is the CTX4-10E Combi Oven that features express touch control and is capable of housing four full sheet pans. “Our smallest combi oven has all the functions that the larger ones have, and we are targeting this product towards food trucks and F&B outlets that have space constraints. What’s more is that the colours can be customised to match the interiors or requirements,” Talenti said.

The smoking unit is a feature Talenti is particularly satisfied about: “the built-in feature lets you smoke fish, Turkey or meat either cold or hot. This means it’s not only suitable for cooked items but for raw food products as well. You can even smoke chocolate in it, for example.”

Talenti said the larger units are capable of running an entire operation of a restaurant and targets the larger operations and hotels with it. “The larger combination units are ideal for mid-market hotels, which can do up to 80 meals at a time, without the smells or taste mixing.”

Talenti said that it is achieved by injecting fresh steam and heat, which recycles out of the machine once it heats the food inside.
