Hendricks Bar, located in Four Seasons Dubai at Jumeirah Beach, has hosted three guest bartenders in recent months. Following Denzil Heath’s appearance in October and Lucia Cinalli’s in November, Philip Bischoff created cocktails at Hendricks Bar on December 6 and 7. Caterer Middle East caught up with Bischoff, who is bar manager of Manhattan in Regent Singapore, a Four Seasons Hotel, and a Bacardi Legacy Cocktail Competition judge, ahead of his visit to Dubai.

What first attracted you to working in the industry?
I started working in the industry as an extra job alongside studying Business Administration with a speciality in Health Management. As time went on, the hospitality industry became more attractive and interesting to me. I got to a point where I had to make a decision on what I wanted to do — and it was bartending. I decided to move to Switzerland to further my career and from there it has been an exciting journey up until today.

What do you enjoy most about your job and what might surprise people to hear about it?
The best part is sharing experience and knowledge with my colleagues and teammates. It’s about all about learning (even from your mistakes) to help a team grow.If there is someone who has a wealth of experience, you learn from listening, and I love to share my experience with my team.

These days it’s amazing how many opportunities we have to share our experiences and to spread the love of Manhattan bar around the world by guest bartending, attending trade shows and even conducting little talks.

I think people, step by step, have realised that bartending is not only making drinks; it’s about providing an experience to our guests every night. It’s a lifestyle and entails a lot of commitment of a person and the people around you.
