Atlantis, The Palm’s Ossiano Bar -- three-star Michelin chef Santi Santamaria’s first restaurant outside Spain -- will introduce a special tapas menu next month.

Coming into play on April 10, the menu reflects Santamaria’s “Catalan roots and love of fresh seafood”, according to a spokesperson for the outlet.

“His cooking, in traditional Catalan style, is…dominated by his respect for the seasonality of food,” she added.
