“My family has been producing knives since 1890. We have seen a lot of changes in professional knives, because after the BSE issues a lot of laws were made regarding knives – we had to change handles so they could be easily sterilised and dish-washer safe and so on. So we made all these changes and now our whole range is dish-washer safe and sterilisable and we have all the correct certifications for safety and hygiene.”
