Middle East is as ruthless as one can't imagine, if we go back to the history we will find actually the literacy level of Middle East in itself which is base base background. Local culture is indeed there, but when it comes to the development local mentality is very local or micro managed somehow. in comparison if someone with guts moves to Middle East is like moving from Four Seasons/Ritz to any local company where standards are not measured by one's skills & strengths, on the other hand skills are being very well admired by the Asian countries and so they are on the top in the industry. Building skyrise towers and opening tallest hotels and biggest malls would never be a future for the talent, which Middle East does not understand. There is a massive gap or flaw in the region which can't be filled. Labour is labour but how about superior Chef's getting equalized to the labour somehow.

Aaron, If the middle east wants more Master Chefs and higher disiplines, Then, All the countrys in the middle east, including the UAE "Need to hire great Chefs over the age of 40", and stifle "Age Discrimination" which is present policy in the middle east. That isn't to say that there are not talented Chefs in the 25 to 35 age range, but to raise the bar a notch the older and more experienced Chefs would be able to bring more to the table. Aaron please speak up for Chefs over 40!

Not so sure, if the UAE are really so "less competitive" when it comes to the overall package. I do only think, that there should be more flexibility, when it comes to the package. Instead of luring someone with AED 1500 plus accommodation and all, it might just make sense to offer AED 5000 without accommodation, transportation and all. There are sometimes the option for applying for a allowance... But often it is overlooked... Now 5000 Dirhams are around 1000 euro basic salary... Hence it is not bad at all... For the Master chef controversy... It is an entertainment program. I do understand how a chef feels, when he is watching this... However this feeling finds me as well, when flair bartender are celebrated in the press "as the best bartenders of the world". It won't have much impact in our industry.
