What a shame that this type of experience is not happening on all four corners of this world. Some things do change, not always for the better as it seems in my neck of the woods, young chefs are being pampered, and have lost that sense of respect. Glad to see though that your shared experience will benefit a broad range of people, as kitchens themselves have not changed like you say, only the people's mindsets and sense of injustice at having to re-learn. The trick, is to never stop learning. Thank you for your wise words, and great story!
