I'm not surprised you had a bad experience at Atlantis - in my opinion, this is symptomatic of what is happening all over this region. Hotels open too quickly, forcing operators to just recruit whoever they can get and not necessarily seeking out the best people. This is particularly evident in F&B, where I daily come across rude, disinterested or simply ill-trained staff (and mediocre meals) at restaurants claiming to be five-star. It's about time these outlets faced up to the fact that they can talk about decent recruiting and training all they want, but until they actually put their money where their mouth is and put some time and effort into finding and training decent staff, visitors and residents in the Middle East will continue to find the so-called 'top' restaurants severely lacking.

Train the managers! A good manager will whip his team into shape, the owners don't care, it's too obvious. Dining in this country is a joke.

Management certainly don't, owners do care, but only about profit. Too many diners are being taken for a ride. I'm glad the authorities are tackling hygiene, but it is up to the customer to avoid the rip-off restaurants where staff are bored and underpaid.

Very rarely now-a-days do you find a GM with alround experience in both rooms and F&B. I can check into any hotel in Dubai and tell you what the speciality of the GM is. Strangely I then find that the deputy has the same specialism. Leadership comes from the top two or three managers. Most are rooms orientated at present. That may change over time. My biggest complaint about F&B is that most try too hard to be something they cannot ever be. My 35 years in the industry advice? Keep it simple and deliver it well.
