Restaurants in the Middle East will never be as successful as those in major culinary capitals like London and New York, because the people who own them simply don't care about operations - they're only interested in the revenue it brings in. How many restaurants do you know in Dubai for example that are family run? Or where the owner works in the kitchen? Or where the proprietor is at the door on busy nights, greeting his regulars by name? There are none - and as far as I can see, it'll never happen until we get people who are in it for the long-term, truly care about their business, want to be a part of it and see being a restaurateur as a career, not just a way to make money.
