Chin Chin...Cheers. Food should not be a Broadway Production...I get bored of the over manipulated food that comes from "fine" dining these days. Coming from the Northwest, I prefer a simpe concoction of a fresh product. I believe that the art is the food and the chef's job is to present that food as close to it's natural state as possible and to do this the chef must be able to bring the freshest and best quality product to the table. As for the wait staff changing for courses! Pah! As a table waiter I can tell you that you do not want to inundate your staff with this mundane task! Their job shoud be to put the diner first and foremost, the server has enough to worry about without having to change...
