New restaurant Vôi has opened at the Jumeirah Zabeel Saray five-star resort on The Palm Jumeirah, Dubai. 

It will be headed up by chef de cuisine Phuong Mai, a Vietnamese national from French-influenced Hanoi, who makes her debut in Dubai in this restaurant.

The restaurant manager, Quentin Fougeroux, is a French national who has experience in luxury Thailand resorts like the Six Senses Hideaway Resort & Spa.

Vôi’s signature dishes include: marinated Scottish salmon spring rolls; Brittany blue lobster with mango artichoke salad; duck breast, foie gras and brussel sprouts in a tamarind sauce.

The restaurant, inspired by the spirit of French colonial Southeast Asia in the 1920s, has a seating capacity of 80 guests, and the design features high ceilings, white walls, crystal chandeliers, black lacquer furniture and floor-to-ceiling mirrors.

The Jumeirah Zabeel Saray resort is situated on the west crescent of Palm Jumeirah is described as a 'homage to the golden age of the Ottoman Empire.
