Matthew Goodlet, executive chef at Monte-Carlo Beach Club, Saadiyat, said: “We wanted to produce something that will bring the best out of Emirati ingredients and take diners on a journey this Ramadan, and there is nobody better than Chef Khulood to help make this happen as she is really focused on authentic UAE food.”

Chef Khulood is responsible for overseeing the implementation of Arabic and Emirati cuisine throughout the restaurants in TDIC properties, with the aim of ensuring local culture is always part of a dining experience. She trains other chefs in the art of cooking local food and has previously worked as an assistant to Chef Ali on Saama TV.

“We spent a few weeks planning this and with Chef Khulood’s help we have created a really special experience for people to enjoy this Ramadan. It is unique because so many people do buffets and for Iftars produce lots of Moroccan and Lebanese food, but we wanted something unique – so we have freshly cooked Emirati food with fantastic flavours brought to your table,” added Goodlet.

Dishes are set to include spreadable mezze including olive tapenade, home-made hummous and crispy lavash as well as lamb therred, aishulaham with local hashwa and madrouba to name a few.

The iftar, served until 9.30pm is priced at AED229 (US $62).
