A new category has been introduced at the Caterer Middle East Awards 2013 to pay tribute to those behind the scenes that keep an F&B operation running effectively.

The decision to introduce The Chief Steward of the Year category came as it was realised more attention needed to be paid to the essential works stewards put in each day to ensure the chef is able to carry out his/her role smoothly and guests have an excellent overall experience.

“Stewarding is almost an operation in itself. There’s a lot of work that this team puts in which is often taken for granted,” said Caterer Middle East editor Hannah Abdulla.

The chief steward is responsible for the productivity of the department, the quality of the service, the relationship of the staffs of the stewarding department with each other and the relationship of the staff with the guests. The chief steward reports directly to the executive chef, and he also works closely with him.

“The team at Caterer HQ felt it important to recognise the work these guys put in on a day to day basis,” added Abdulla.

Caterer’s Chief Steward of the Year is expected to be someone who is exceptionally organised and manages the necessary admin functions effectively, controlling loss and breakage and ensuring adherence to budgets; an effective team leader who ensures the stewarding team is well communicated to at all levels concerning rules and regulations of the kitchen and; someone that makes sure all aspects of the kitchen and the restaurant are always kept clean according to the health and safety standards of the establishment.
