Le Royal Meridien Beach Resort and Spa in Dubai has re-launched Maya Mexican Kitchen and Lounge.
Set on the beach of the resort, the restaurant offers a modern twist on Mexican classics, with a menu put together by respected chef Richard Sandoval.
The outlet was renovated to reflect the look and feel of Maya New York and now sees guests welcomed into the two story restaurant and lounge which is decorated in warm terracotta with Aztec-style art lines running along the walls. Guests can also enjoy the outdoor area whose signature feature is a bridged pond leading to a wraparound terrace.

“Maya by Richard Sandoval was one of our most popular outlets and we are excited to re-open our doors to our guests and re-launch it in its new brand identity as Maya – Modern Mexican Kitchen and Lounge”, said Pam Wilby, complex general manager of Grosvenor House Dubai and Le Royal Méridien Beach Resort + Spa Dubai.
There is also a Tequila Room, the Tequileria, which houses 60 labels of Tequila.
For the food, guests can tuck into the Queso Fundido – a unique twist on the classic cheese fondue, with tortillas and fresh mushrooms. Predicted to be a hit is also the Roasted Chicken Cazuela, a traditional Mexican braise with warm tortillas, Mexican-style rice and mole poblano – a traditional, savoury sauce unique to Mexico. To top the meal off, guests can indulge in the enchanting bomba de chocolate, a bitter-sweet chocolate mousse, accentuated with caramelized walnuts and topped off with sweet coconut biscuits.
Chef Richard Sandoval commented on the reopening of the restaurant, saying: “I am proud to go back to my roots and present my interpretation of modern Mexican cuisine to a city as vibrant as my dishes are. Having learnt to cook from my grandmother, I have spent most of my life perfecting the zesty dishes that can now be enjoyed in full force by diners at Maya Mexican Kitchen + Lounge. It is my privilege to welcome diners to the restaurant to– as we say in Mexico, mi casa es su casa.”
Maya Modern Mexican Kitchen and Lounge is open from 7pm-12am daily. The longe is open from 7pm-2am daily and until 3am on Thursdays and Fridays.
