UK chef Silvena Rowe, famous for her appearances on BBC’s Saturday Kitchen and ITV’s This Morning, told Caterer she will not be including items on her upcoming Dubai restaurant’s menu that cannot be sourced locally.

In Dubai to finalise plans for her new Ottoman-themed restaurant, Rowe told Caterer Middle East that she was inspired by the values of NKD Pizza and believed “it’s a no-brainer, it makes sense, and its easier to manage” a supply chain which sources goods locally.

“I’ve seen most chefs here, great chefs – they come and they import. I’m not going to be putting monkfish, and sole, I’m not interested – I want to do everything that is available locally – local greens, local everything.

"I want to really clamp down on the carbon footprint – I don’t want to import. I know it’s easier said than done, but I’ve done a little research and if you work closely with suppliers – it can be done. I just need two or three farmers here that I can work closely with and get everything from inn order to achieve this," she said

Rowe’s restaurant Quince opened at the Mayfair Hotel in London in June 2011. She is also known for her book Purple Citrus and Sweet Perfume.
