Grand Millennium Dubai has announced key promotions in the hotel’s culinary team, including executive sous chef Ayman Valappil’s promotion to executive chef.
Valappil has been with the hotel since its opening in 2007 and has nearly three decades of experience working in five-star kitchens around the world.
His previous experience in the Middle East includes Le Royal Meridien, Crowne Plaza, Holiday Inn Salalah, Oman and Jeddah Sheraton.

Commenting on his promotion, Grand Millennium Dubai general manager Peter Mansourian said: “Over the years Chef Ayman has proven he has the skills and expertise to lead our culinary team. His creativity and passion for the job are unmatched as he has consistently delivered excellence executing a variety of cuisines to match the taste of food connoisseurs. We are confident that with his exceptional talent and vast experience, he will continue to surprise and delight our guests.”
The hotel also promoted oriental chef Alaa Al Nachar to senior sous chef, taking over the position from William Francisco Xavier Dias, who is now executive sous chef.
