Atlantis, The Palm has launched its new restaurant, bar and lounge concept, Yuan.

The outlet combines modern Chinese flavours with ancient Asian influences, offering Cantonese and Szechuan and cuisine created by executive chef Jeff Tan, formerly of Hakkasan Mayfair.

The design of Yuan mirrors a Siheyuan, a traditional Chinese house. Guests can be seated in the Oriental Inner Courtyard, designed using Chinese elements of harmony and balance, and enjoy food and beverages from the bar and kitchen, while the Principal House, where the scenes of nature and warm interiors are reminiscent of dining halls built for Chinese nobility, provides the perfect setting for a sharing of the chef’s signature dishes.

“The concept behind Yuan is to provide our guests with a traditional Chinese experience in a vibrant and gorgeous setting, but also include surprising touches that you've never seen in this region. We wanted everything about Yuan to be stimulating and totally unexpected,” said Atlantis, The Palm president and managing director Serge Zaalof.

Yuan’s menu of tradition Cantonese and Szechuan dishes blends high quality, fresh ingredients with Western cooking methods. Dishes on the menu include Yuan’s spin on Chinese staples such as sweet and sour chicken, with pineapple being complemented by tart pear for an exciting twist.

The menu also features a list of oriental barbeque specialities including Peking duck, crispy roast chicken marinated in five spices, and braised beef cheek.

Seafood dishes range from oven-roasted Chilean sea bass fillet with honey infused superior soya sauce on sautéed scallop, prawn and mushroom to sautéed prawn with Alaska king crab in Szechuan hot bean sauce.

“We’re thrilled that Executive Chef Jeff Tan has come on board with us to revolutionise the idea of modern Chinese cuisine in Dubai, while also pushing the bar and lounge concept which introduces a much needed intimate and stylish locale for a night out,” added Zaalof.

The restaurant also has a traditional tea ceremony prepared by Dubai’s first Kung Fu tea master, offering guests a chance to enjoy the flavours and aromas of specially handcrafted teas brought from the country’s different regions.
