Shangri-La Hotel, Dubai has appointed a new executive Chinese chef, Chunlin Xu, for the hotel’s signature Chinese fine dining restaurant, Shang Palace.

Xu brings with him over 20 years of culinary experience in five-star hotels from around the globe, with previous experience in Dubai.

His previous role was with sister property Shangri-La, Pudong, and Xu has already introduced a new menu with a strong focus on Shanghainese cuisine.

The highlight of Xu’s menu is a live seafood option, where guests can choose from live lobster, crab, garoupa or turbot ready to cook three ways upon selection, and with a choice of five sauces.
