Mori Sushi restaurant manager Emad Narwan and head chef Wael Abdelrahman discuss the new Dubai-based restaurant, which serves Japanese-Brazilian fusion cuisine. 

What makes Mori Sushi special in comparison to its competitors in the market?
Emad Marwan: This can easily be found in our slogan ‘Mori Sushi — the art of fusion sushi’. With the fusion principle, we created a sushi menu matching that exceeds the desire of sushi lovers. Our sushi chefs are passionate about being the absolute best in food quality, freshness, presentation, and taste combinations.

Wael Abdelrahman: The variety of dishes we offer exclusively through our fusion menu. This Japanese-Brazilian fusion is completely new to the UAE market and gives us our edge. We also pride ourselves on catering to all tastes and requirements — so much so we even have a vegan section on our menu.

How do the front-of-house and back-of-house teams support each other?
Marwan: Before we even began to built the restaurant, we invested in building the right team — a family that works together to ensure all aspects of our guests’ experiences are flawless. Team members are committed to our ethics and values, which involve positive communication and understanding, which encourages everyone to be supportive.

Abdelrahman: Mori Sushi’s team works together as a unified entity where we all support each other. Our team is a reflection of our brand, and we aspire to always be the best no matter what we’re doing. This is also visible in the way we treat each other as a family. It’s all about supporting each other.

How do you ensure the outlet is busy and profitable?
Marwan: I personally believe in the simple recipe of treating guests as if they were friends visiting your home. We always try to create a warm and welcoming vibe at Mori Sushi, whilst retaining the highest possible standard of food quality, service, and menu prices and selections.

Abdelrahman: The aspiration to always satisfy our guests is what really drives us. We want to ensure that our guests are happy when they leave us, through offering the absolute best quality and the widest variety of fusion sushi. In addition to this, we have introduced the Robata grill, which guarantees tender meat.

What are the biggest business challenges you face?
Marwan: Being a newly opened restaurant in a city with many culinary choices is challenging. We believe that we are the best at what we do; we have an exciting menu with a fusion of flavours, fantastic location and a great team.

Abdelrahman: Dubai is a competitive market to enter, but we are positive that we have what it takes to impress sushi lovers everywhere and we’re very excited to establish a profound presence here.

What does the future hold for Mori Sushi?
Marwan: The future is very bright for Mori Sushi. We have had great initial success with our opening in Downtown Dubai and we have a strong belief that we will be one of the top go-to sushi destinations in town.

Abdelrahman: As we continue to strive to be bigger and better than all the other players, we’re looking to expand significantly within the next few years, so we are able to satisfy sushi cravings all over Dubai and the UAE.
