"Of course - otherwise I would not have a job! It's just a matter of how you do it. In my opinion, how you do it is your bring your best talent together and create restaurants that are little entities so that it feels like a standalone. A restaurant in a hotel can feel like its somewhere out in the country, for example. If the product is good and the talent is good and if the colleagues are empowered, this will then empowerment will drive the restaurant."
