Yalumba is all set to open its doors this week following a summer-long refurbishment.
The F&B outlet located at the Le Méridien Dubai Hotel and Conference Centre first opened its doors more than 10 years ago.
Director of operations Brendan McCormack told Hotelier Middle East exclusively: “Yalumba started the brunch culture in Dubai when it was one of the first to introduce the concept in 2005. The refurbishment is so that we offer something new, and ensure we stay ahead of the competition."
McCormack conceded that Yalumba has fallen down the pecking order in the brunch scene, but believes the outlet has a strong following with tourists and residents alike.
Yalumba’s new design draws inspiration from the Barossa Valley in southern Australia. Integrating the DNA of an Australian winery and cooperage, its design is described as rustic, intending to recreate the ambience of the various wine making regions in Australia.
Timber parquet flooring and glazed bricks are set against contemporary concrete finishes, with vintage-inspired furniture and lighting elements used throughout.
Along with its renovation, Yalumba has also appointed Dominic Petzold as its new executive sous chef. Petzold joins the hotel following a six-year stint at The Westin & Le Méridien Mina Sehayi.
Together with the F&B and operations teams, Petzold is gearing up to launch new daily themed nights throughout the week, while continuing some of the offers the long-running restaurant is known for.
