Lima, the restaurant and bar concept at the forefront of the world’s initiation into Peruvian cuisine has announced its new Dubai venue, Lima Dubai at City Walk.
Opening its doors in London in 2012, Lima Fitzrovia is the first and only Peruvian restaurant to win and retain a Michelin star. The flagship was followed by Lima Floral in London’s Covent Garden two years later and now Lima Dubai will represent the first venue outside of the United Kingdom.
Lima has built its reputation on its ability to bring together some of the world’s leading culinary innovators, who together, produce flavours that set Lima apart from the competition, offered in an accessible, warm and engaging setting. Integral to the Lima success story is the passion and ambition of the partnership between Lima London Chef and Head of Culinary Development, Robert Ortiz and the renowned Virgilio Martinez, Chief Proprietor of both Lima and Central Peru the world’s leading Peruvian restaurant, currently ranked #4 in the World’s 50 Best Restaurant List. This collaboration has resulted in a culinary philosophy that stays true to Peru and all that nature has to offer whilst engaging diners of all ages in an extraordinary exploration of the region.
Lima’s belief in identifying next generation talent will be showcased in Dubai through the appointment of Head Chef Diego Sanchez, who will work closely with Ortiz and Martinez to continue the strong ties with Lima’s Peruvian roots. Diego has previously worked under Virgilio in Central and is attuned to the natural, organic dishes that have become a Lima trademark.
