Hotels in the UAE can save up to AED 110,100 (US $30,000) or more in annual food costs, said Marc Zornes, founder of the app Winnow, which monitors and weighs food waste.

“We typically deliver three to eight percent food cost savings for the sites we work with. So in monetary terms for larger hotels, this is usually $30,000 per annum and higher in food cost savings alone,” Zornes said. “You can typically add 50 percent to these benefits by considering the labour and utility savings.”

UK-based Winnow is presently operating in five hotels in Dubai and one in Doha, with six additional contracts in the UAE due to go live within months.

The company is in discussions with a number of hotel groups in Qatar, Oman and Saudi Arabia, according to Zornes, but initial focus will be on getting 10 to 20 sites live in the UAE before embarking on regional Gulf expansion.

The app’s technology provides visibility of the cost of waste to hotel staff and analytics to help the hotel’s chef identify savings and efficiency opportunities. Cloud analytics then help the executive chef and his team to focus on areas to reduce waste and improve profitability.

Winnow is establishing a regional office in Dubai to spearhead expansion plans in the Gulf region, although the app already started operating in the UAE half a year ago with support from the Dubai Future Accelerators programme.
