Mirzam, the artisan chocolate maker based in Alserkal Avenue has been recognised by London’s Academy of Chocolate, with five of their chocolate bars receiving an award.

Mirzam is the only craft chocolate maker in Dubai, and the first United Arab Emirates chocolate company to have been recognised by the Academy of Chocolate.

The boutique brand won four silver awards for their 65% Single Origin Dark Chocolate India, Dark Chocolate with Dates and Fennel, Dark Chocolate with Rose, White Chocolate with Saffron and a bronze award for their White Chocolate with Orange Blossom and Roasted Almond.

Speaking to Caterer Middle East about the rise of craft chocolate in the region, Mirzam chief  chocolate officer Katy Johnston said: “Within the craft chocolate industry, one of the strongest trends i see developing is a focus on developing the more deep cocoa content chocolate bars (80% and upwards), using traditional methods to create more flavour. As our customers are generally those who really enjoy dark chocolate - exploring the production process to give delicious flavours a chance to headline (as opposed to just 'bitter') is really interesting. So rather than adding more flavouring as commercial chocolate production tend to - we use the roasting process, more carefully sort out the best cocoa beans - and use different aeration processes, to really improve the flavour profiles.”
