Josefinna Vallve has joined Palace Downtown’s Argentinean outlet, Asado, as chef de cuisine, delivering a brand new culinary concept starting on Friday, October 13.  

Arriving at the property with extensive experience, Vallve is a graduate of the Gastronomic Institute D’Gallia, where she earned distinction as a member of the honour roll.

Her career includes stints at fine dining establishments where she helped to craft dishes that paid homage to Peruvian cuisine. Using her experience and cultural background, Asado is launching a culinary fiesta with the introduction of the rich flavours of Latin American market food through the new lunchtime concept of a Grape and Harvest lunch.

Vallve has added dishes such as merluza con arroz negro y salsa de langostinos (Chilean sea bass with squid ink risotto), and tira de asado (slow-cooked short ribs with creamy mashed potatoes).
